Cauliflower Bread Sticks

Cauliflower Bread Sticks

Slightly adapted from The Examiner
Recipe & Description from Sandy's Kitchen

Ingredients:
1 cup raw grated cauliflower or 100 grams  (2 Greens)
1/4 cup egg substitute * you are able to add up to 2 oz of additional protein per Nutrition Support
1 cup shredded or 4 oz 2% light mozzarella, divided (1 Lean)
Garlic salt and Italian seasonings, to taste

Marinara Sauce
1/2 cup Italian diced tomatoes - less than 5 g of carbs per serving (1 Green)
You can also use Walden Farms Marinara Sauce, but 1/4 cup is considered to be 2 condiments and is not a vegetable. You would have to add a third of veggies to your meal if you choose this option. 

Directions:
Puree Italian diced tomatoes in a small chopper. Set aside.

Preheat oven to 350. Mix cauliflower, 1/4 cup egg substitute, and 3 oz or 3/4 cup shredded mozzarella together in a bowl until combined. Line a 9 x13 loaf pan with parchment and lightly spray with Pam. Pour mixture into pan about 1 -1/2 inch deep. (It is okay if the mixture does not cover the entire pan). Bake at 350 for 30 min or until set. Lift the edges of the parchment and place bread with parchment on to cookie sheet. Carefully use a spatula to lift the edges of the dough off the parchment and flip the dough. Bake for an additional 15 minutes at 450 degrees. Take out of oven and with a pizza cutter, slice strips through set dough. Separate slightly. Sprinkle with garlic salt, Italian seasonings and 1 oz or 1/4 cup 2%  reduced fat mozzarella or three cheese blend. Continue baking at 450 degrees for about 10 more minutes until cheese is melted. Serve with marinara sauce.

1 Complete Lean and Green Meal, No Healthy Fat Required  

Place a piece of parchment paper inside a loaf pan with the sides sticking up a bit. Spray the parchment lightly with cooking spray. Pour mixture into pan and spread . The mixture does not have to reach the entire pan. If I were to spread it inside the entire pan, the bread sticks would be too thin. Bake at 350 degrees for 30 minutes.



After, bread sticks are set, lift the parchment paper by the sides and remove from loaf pan and place on a cookie sheet. Gently use a spatula to lift all edges of the bread off the parchment so that you are able to flip it easily.


This is what mine looked like after it was flipped. After flipping, I changed the temperature to 450 degrees and baked for another 10 minutes.


Then cut bread into sections to resemble bread sticks.


Sprinkle garlic salt, Italian seasonings, and cheese over the top. Bake at 450 degrees until cheese is melted, about 10 - 15 minutes.

Bread sticks that are totally OP! Serve with marinara sauce.

3 eggs at room temp (1 Lean)
3 tablespoons light cream cheese at room temp (3 Condiments)
1/4 tsp cream of tartar (you can use white vinegar or lemon juice as a substitute)
1 packet splenda (1 Condiment)

Ingredients:
3 eggs at room temp (1 Lean)
3 tablespoons light cream cheese at room temp (3 Condiments)
A pinch or 1/16 tsp cream of tartar (you can use white vinegar or lemon juice as a substitute)
1 packet splenda (1 Condiment)

Instructions:
Preheat oven to 350 degrees. Separate egg whites from egg yolks, putting whites in one bowl and yolks in another bowl. Add cream of tartar (or vinegar or lemon juice) to whites. Beat whites on high until stiff peaks form. Set aside.

Add cream cheese and splenda to yolks. Whisk yolk mixture until blended. Gently whisk yolk mixture into whites being careful to not over mix and make the whites fall. On a cookie sheet lined w parchment paper, make six equal sized blobs, not touching.

Bake at 350 for 30 to 35 minutes (Mine cooked in 25 minutes). They are good warm, but awesome cold and can be toasted without problem! Freeze the left overs in plastic wrap or individual sandwich bags or keep them in the fridge for up to 5 daysin a large ziploc bag. Toast them to make them crispy again!

Makes 6 Rolls or 3 servings
2 Rolls is 1/3 Lean and 1.33 Condiments

If using regular cream cheese instead of light cream cheese, 2 rolls is 1/3 Lean, 0.16 Condiments, and 1 Healthy Fat

You need to add 2/3 Lean to your day. You can have:
 3.3 oz beef or pork
4 oz of chicken
4.6 oz of shrimp or fish
1 -1/3 cup egg beaters
2 Morning Star Farms Sausage Patties
2 eggs

If you have one roll, you can have:
4.16 oz beef or pork
5 oz of chicken
 5.8 oz of shrimp or fish
1 - 2/3 cup egg beaters

Beat egg whites for six to seven minutes. If not your rolls will turn out like examples 1 & 2.

Wednesday Weigh-In: 8 Month Mark

Yesterday it was my official 8 month mark on Medifast. 
That's 8 freakn' months. That's 32 weeks. That's a long time.

I hadn't been losing as much as I had hoped the last two weeks. I only lost 1lb each time. Hey, at least I was still losing. So I guess it could be considered a win win.

Anyways. I went up to my Medifast center at 9 am and we did our monthly weigh-in.
I stood on the machine that calculates everything. It's called the InBody 320.
Body Composition Analysis, Obesity Diagnosis, Impedance Index, & Weight Control.

  • 1 Box of Jello instant No-Bake Cheesecake Mix
  • Reese's Peanut Butter Cups (one per each Cheesecake)
  • 1 Cup of Mini Chocolate Chips... for sprinkling on top (optional)
  • 1 Cup of Graham Cracker Crumbs
    (make your own or use the enclosed back of crumbs from the No-Bake Mix)
  • Paper Cupcake Liners
  • A Cupcake Pan

Birthday Cake in a Jar

Birthday Cake in a Jar

  • 1 yellow cake mix, prepared according to package directions
  • 1/4 cup rainbow sprinkles (I used an entire small container) 
  • 1 jar vanilla frosting, tinted into two colors
Stir the rainbow sprinkles into the prepared cake mix. Bake according to package directions in a 9×13 baking dish. Once the cake is cooked and cooled, tear it into large, crumbly pieces.
Assemble the birthday cake in a jar by placing a small amount of cake into the bottom of four small canning jars. Top with one color of frosting, a bit more cake, and the second color of frosting.  Top each jar with a seal and lid. Store in the fridge for up to 2 days.  Serve with candles and a lot of birthday wishes.
Want to send your cake via snail mail? Feel free to pack it tightly and pop it in the mail, but you’ll want to make sure it arrives at your destination within 3 days for maximum freshness.
Makes four cakes in jars.

Birthday Madness: Keeping Clean

So yesterday was Wednesday Weigh-In. It was also my friend, Lacey's, birthday.

So I've been asked this question a lot. "Don't you miss real food?"
Well no. I don't miss real food. I eat real rood. I just don't miss fast food, or the crap food. ha-ha, crap food.

Anyways. Lacey is turning 21 on Friday and Wednesday was my last day with her.
I know two things about Lacey: She's tiny and she likes chocolate.

I wanted to bake a cake (which I ended up doing), but I thought about it.
How would she carry a cake home, and how the hell would I get it to work?
Simple. A Jar.

Sprouts Round 2 and Wal-Mart


Yesterday I went shopping at Sprouts for my weekly food for Medifast.
You can see my first post, here.

Anyways the noodles I got were not the right noodles
(even though my Center said they were)!
It's helpful to check out the Medifast Facebook page and ask questions.
Anyways, Medifast told me what noodles I needed. 

I saw a picture on my Medifast Instagram feed randomly at night and saw the noodles!
I asked the girl where she got them, and I swore my jaw dropped. "Sprouts".
I shook my head and then asked if they were in the noodle section and she said no,
The noodles needed are refrigerated. "DUH" I thought to myself.

So today I went back up to Sprouts and found them! I got four bags and another Tofu.
They'll definitely being a review and post about them sometime in the near future.

Anyways. Then I went to Wal-Mart and finished up the rest of my shopping.
I bought more stuff because I saw so many delicious tasting recipes last night!

The Frozen Meals and Milk are for my grandmother. 
I guess since she's 94 I'll get her what she wants. ;)

BBQ & Ranch Chicken Sandwich Recipe

Today for lunch we had decided on Stir Fry steak and Lettuce Wraps.
I decided I didn't want that, and since I'm the cook I did a complete 360

Chicken. 

Not just chicken. BBQ Chicken. Not just BBQ Chicken, but BBQ & Ranch Chicken.
Plus, cheese.


Looks delicious right? WELL IT FREAKN' WAS!!
This is a two step recipe meal 
You need to make the roll/bread/slice of heaven and then the chicken.
If you're really wanting bread on the Medifast diet - This is your substitute.

Revolution Rolls

So this was my first attempt to make the dough. I failed miserably and had to restart. It's okay though. That's what cooking is all about. You need to make mistakes to learn.


This is what stiff peaks are suppose to look like. We could have beaten' them a bit more, but we were hungry and decided this was good enough.




Next came the whisking of the yolks.


Then you pour in into the whites and pray they don't fold over and stay fluffy.


Make your blobs.


Place in the oven and let them cook. I think next time I'll turn them over so everything gets evenly cooked, or spray Pam on the parchment paper. 
They are very fragile and stuck to it like glue.


Now onto the second recipe! The chicken.

BBQ Ranch Chicken Salad Sandwich

Ingredients:
2 Revolution Rolls (2/6 Lean and 1.4 Condiments)
3 oz chicken breast, grilled and cut into chunks (3/6 Lean)
0.66 ounces of 2% reduced fat cheddar cheese, shredded (1/6 Lean)
1 tbsp Smokin Joe Jones No Sugar Added BBQ Sauce (1 Condiment)
2 tbsp Light Hidden Valley Ranch Dressing (1 Healthy Fat)

Directions:
Cook chicken breast on grill, broiler or George Foreman Grill until cooked thoroughly. Cut into small chunks. Add BBQ sauce, ranch dressing and cheddar cheese to chicken and stir until blended. Serve on two revolution rolls.

1 Complete Lean, 2.4 Condiments and 1 Healthy Fat


So you're going to grill your chicken or do whatever you do with your chicken.
Then when you bring it inside, you're going to weigh out 3oz if you're on the Medifast diet.


Once you're done weighing it you're going to cut it up or, as I tried, string it out.
You're then going to place it in a bowl and add the rest; Cheese, BBQ sauce, and Ranch.
Stir. Stir. Stir.

One you believe you have achieved the perfection of meal, place it on your bun.


Then eat the hell out of that delicious sandwich!

Sprouts

It's that time of the week. No.. not that time. Good Gracious.
It's Grocery Shopping time! Food. Food. Food.

This week I decided instead of going to my regular Wal-Mart that I would hit up Sprouts.
For those who don't have a Sprouts in your area it's basically a nice organic farm store.
i.e. A Healthy Quaint Grocery Store

Now I usually go shopping for a weeks worth of food at a time, maybe two if I feel lucky.
My total at Wal-Mart usually ends up at $120+ even with my 10% Employee Discount.
Today however I was happily surprised that my food cost $61.11.
Some might think that's expensive, but not when you're feeding four people.

I only bought food this week that would make me have to try new recipes.
I'm tired of eating the same old thing week after week.
Now I have to make something new and expand my horizons.
Yay for expanding!


It took me about thirty minutes to get everything I wanted or needed into this little basket.
It took about fifteen minutes to decide what type of noodles I could and couldn't eat. That ended when I called up my Medifast Center for help. I know people on the Medifast Instagram feed post pictures of noodles, but I honestly couldn't figure out which ones I needed or were allowed to have. I couldn't find any soy or tofu noodles. Then I asked my Medifast if it was the same to be "Gluten Free" and they said yes.

So what does that mean? Of course I bought four different type of Gluten Free noodles.
I know I know - I'm weird.


My entire purchase. Doesn't it look delicious? My father told me he was proud of me.
He said when I was little I would've never tried any of this, and he was right.
Now I enjoy creating, trying, and eating new and healthy food.

March Madness

March has started off as a crazy month, and I'm only the third day end.

I've been working non-stop for the last seven days now. I haven't had time to do anything really. My exercise has been standing up all day at a register, then free dancing when I can. Everything gets boring after doing it over and over and over.

Today though is my last day before I have a day off, and on that day off I'm going to go walking. I'm actually excited to be working out. Scary, right?

Tonight is steaks and asparagus. DELICIOUS.

Maybe I'll post a picture? Who knows.
