Newest Monthly Medifast Order


Ordered in my month supply of Medifast before I left for South Carolina. 
Or course that big brown box comes in the day after I leave.

So I decided I'd get a few new items this month. Now if you know me and know my Medifast experience so far you know I don't like trying new things. I like doing the same old, same old so I get results faster. I like eating the same things that I know will help me lose weight. BUT it doesn't matter what meals I eat on Medifast. All of them help me go for the same goal. So I needed to change my mind front on this whole "mind food war" I had going in my head. So of course I asked other Medifasters what they liked and so the items highlighted in red our my new food choices this month. It's quite a few to me, but hey, you gotta change it up somehow.

Adventures of Greenville

Cody took to the wheel. 
He drove us to Greenville for a fun adventurous day!

We stopped on a small dirt farm and picked strawberries!
Plus we got fresh farm eggs! YUM!

Sopapilla Cheesecake

Second Recipe for the cookout - Sopapilla Cheesecake
I can say this tasty treat took first place with everyone! 
It was completely eaten'.

Recipe from: Kuntal's Kitchen

Ingredients:
  • 2 cans pillsbury butter crescent rolls (buy the seamless version if you can find them!)
  • 2 (8oz) packages cream cheese (softened)
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/4 cup butter (melted)
  • Cinnamon and sugar (I used about 1/4 cup sugar and 1 tbs cinnamon)

Directions:
Preheat oven to 350 degrees. If you are using a glass pan, adjust the temperature to 325 degrees. Unroll and spread one can of crescent rolls on bottom of ungreased 9x13 inch pan.  If you aren't using the seamless crescents, be sure to smooth out the seams before adding the filling. Combine softened cream cheese, sugar, and vanilla in a bowl. Spread mixture over crescent rolls. Unroll and spread remaining crescent rolls over mixture, being sure to press together any seams. Spread melted butter over the top and sprinkle with cinnamon and sugar. Bake for 20-30 minutes.

Marshmallow Reeses Brownies

So Cody and his family were having a cookout. I asked if I could make some tasty. Of course Cody said "Yes babe" and then the hardest part came - What to make?

Well I made two things. This is the Marshmallow Reeses Brownies. Next time I'll place the Reese cups all over the batter.  Next I'll spread out the marshmallow cream so it actually turns out like a tasty brownie.

Marshmallow Reeses Brownies

Prep Time: 15 minutes
Cook Time: 25 minutes
Yield: 24 brownies

Fudge brownies with a layer of Reese's peanut butter eggs and marshmallow cream in the center...the best way to get rid of Easter candy.

Ingredients
1 brownie mix (for a 9x13 pan)
1 bag Reese's Peanut Butter Eggs (or cups)
1 cup marshmallow cream

Instructions
  1. Spray a 9×13 pan with baking spray and set aside. Preheat the oven to 350* Prepare the brownie mix according to the package directions for 2 eggs. Beat until just combined.
  2. Spread half the brownie batter in the bottom of the prepared pan. Lay the peanut butter eggs on top of the batter. Drop spoonfuls of marshmallow cream around each egg. Top with the rest of the brownie batter. Spread the batter completely over all the marshmallow cream swirling slightly. Bake for 25 minutes. Cool completely before cutting into the brownies. Store in a sealed container for up to a week.

Notes
You can also use a bag of Reese's peanut butter cups if it isn't Easter.

Grilled BBQ Ranch Shrimp

So this weekend I've decided to "dive" into my lean and green healthier.
So this weekend it's all about the leanest options - Shrimp and Swordfish.

Saturday I enjoyed some nice Gulf Brown Shrimp.
I picked them up at Kroger.

So I unwrapped my shrimp. Then I thawed. detailed, and deveined.
Next I placed two tablespoons of bbq sauce in a bowl along with one teaspoon of Garlic.
I placed my shrimp on the metal skewers and then brushed my sauce on top.


Next I placed them on the grill for about three to four minutes. Flip. Repeat process.

Out of my sixteen shrimp, twelve equaled my 7oz portion.
I saved the remaining four shrimp and gave them to my grandmother for dinner.

I got one tablespoon of ranch dressing in a small bowl and used that as a dipping sauce.
It was mighty delicious!


This was my first time bbqing shrimp and I absolutely loved it! It was very simple.

Vacation Update

Have you guys been missing me? I've been missing you!

I'm on a little vacation in South Carolina visiting Cody!
I bought the tickets for this in November.. so I really didn't have a choice.

It's been hard sticking on the diet this time, but I'm doing fantastic!
My whip cream addiction has gotten out of control however :(

All I've had are shakes here!

I can't wait to be home so I can finally make another youtube video and blog new things with mucho pictures!
Cody computer doesn't have a webcam so that's why there hasn't been an updated youtube video like I've promised.
Maybe I'll find a computer around here that does, or even use my laptop at the airport!

Anyways I've gotta go. Buzzer is a buzzin'

Mother's Day

It was Mother's Day and being the favorite kid 
- Breakfast for Mom on M Day!


So most people know my mother recently had another heart attack. So of course I'm going the healthy route, and I believe she should too! Besides the fact I'm trying to get her to join Medifast, I was hoping this meal would show her that she can eat healthy, delicious new things and that this wasn't going to make her heart explode. Fast forward - she said she enjoyed it.

Ingredients: 
  1. 3 MorningStar Farms Veggie Sausage Links
  2. - 1 Egg (turned into the Revolution Roll)
  3. - 1/2 cup Egg beaters

Directions:
  1. Cook by instructions for Sausage Links
  2. Follow link above for Revolution Rolls
  3. Cook eggs however you like (Scrambled for me)

This is my mommy beating the eggs whites!



I made her taste the roll first. I think she liked it!

Chocolate PB Oatmeal Cookies


Alright guys. It's cookie time, and boy do I mean COOKIE TIME!

These are Chocolate Peanut Butter Oatmeal Cookies!

Ingredients:
  1. 1 pkt. oatmeal (I use maple brown sugar) - 1 Meal
  2. 1/4 tsp cinnamon (1/2 Condiment)
  3. 1 pkt splenda (1 Condiment)
  4. 1/3 cup water
  5. 1/8 tsp baking powder (1/4 Condiment)
  6. 1/2 tsp vanilla (1/2 Condiment)
  7. 1 tbsp Peanut Butter - Optional (1 Snack)
    a. I used Walden Farms chocolate peanut butter


Directions:
  1. Preheat oven to 350 degrees
  2. Mix all the ingredients together and let sit for 5 minutes
  3. Line a cookie sheet with parchment paper or spray with cooking spray
  4. Drop by spoonfuls to make 5-6 small cookies
  5. Bake for 12-15 minutes




They were gooey in the middle after baking them for 20 minutes. 
So many an additional 3 minutes is needed, or if you like them gooey 
- EAT IMMEDIATELY!
